I keep two cans of chickpeas in the cupboard the way other people keep a spare phone charger — quiet insurance against a dinner going sideways. This Greek chickpea salad is what they're for. It takes the bones of a classic Greek salad — feta, cucumber, tomato, olives, oregano — and makes it a real meal by leaning on the chickpeas for fiber and bulk, so a bowl actually keeps you full past 4pm. Fifteen minutes, one bowl, no stove.

Why this works

Chickpeas are mild and a little starchy on their own, which sounds dull but is actually the point — they're a sponge. Toss them in a sharp lemon-and-oregano dressing and give them ten minutes, and they soak up all that brightness and carry it through the whole salad. Meanwhile the feta brings salt, the olives bring brine, and the raw onion and tomato keep it lively. It's the same contrast that makes a real Greek salad sing, with enough protein and fiber to stand on its own.

Rinse the canned chickpeas properly — really rinse them, until the water runs clear. That cloudy can-liquid is where the faintly metallic, "out of a tin" taste hides. Thirty seconds under the tap is the difference between a salad that tastes fresh and one that tastes canned.

Substitutions and swaps

  • No fresh herbs? A pinch more dried oregano covers it, though fresh parsley or dill is worth the trip.
  • Want it creamier? A spoon of Greek yogurt stirred into the dressing turns it into something closer to our Greek yogurt ranch dressing — rich and tangy.
  • Swap the chickpeas for white beans (cannellini) if that's what's in the cupboard; they're softer but just as good.
  • More crunch: a handful of diced green pepper or some thinly sliced celery heart.

Make ahead and storage

This is built for the fridge. It holds 3 to 4 days and the flavour deepens, which makes it one of the few salads I'll happily batch on a Sunday. For the best texture, keep the feta and fresh herbs in a separate little tub and scatter them on as you serve — the chickpeas, olives and dressing are the part that genuinely improves with time.

What to serve with it

Ingredients

  • 2 × 400g cans chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 250g cherry tomatoes, halved (or 3 ripe tomatoes, diced)
  • 1/2 red onion, finely diced
  • 1 green pepper, diced (optional)
  • 120g Kalamata olives, pitted and halved
  • 150g feta, cubed
  • A small handful of parsley or dill, chopped
  • 5 tbsp extra-virgin olive oil
  • Juice of 1 lemon
  • 1 small garlic clove, finely grated
  • 1 tsp dried oregano
  • Sea salt and black pepper

Method

  1. 1.Whisk the olive oil, lemon juice, grated garlic, oregano, and a good pinch of salt and pepper into a dressing in the bottom of a large bowl.
  2. 2.Tip in the chickpeas, cucumber, tomatoes, red onion, green pepper if using, olives and herbs.
  3. 3.Toss everything through the dressing until well coated.
  4. 4.Fold in the feta last so it keeps its shape. Let it sit for 10 minutes for the flavours to settle, then taste, adjust the salt and lemon, and serve.

Frequently asked questions

Canned or dried chickpeas?
Canned, every time, for a salad like this — a good can simmered nowhere, just drained and rinsed, is honest and fast. Dried chickpeas are worth the soak for falafel, where texture is everything, but here they'd be a chore for no reward. Rinse the canned ones well to wash off the tinny brine.
How long does it keep?
This is one of the rare salads that gets better overnight — the chickpeas drink up the lemon and oregano. It keeps 3 to 4 days in the fridge, which makes it a genuinely useful meal-prep lunch. If you can, hold the feta and herbs back and add them fresh each day.
How do I turn it into a full dinner?
It already eats like a light meal thanks to the chickpeas, but pile it onto greens, tuck it into warm pita, or add a piece of grilled fish or chicken on the side. A spoon of the leftover dressing over the top ties it all together.
