Ingredients
- 200g quinoa, well rinsed
- 400ml water or light stock
- 1 large cucumber, diced
- 250g cherry tomatoes, halved
- 1 small red onion, finely diced
- 1 green or red bell pepper, diced
- 100g pitted kalamata olives, halved
- 150g feta, crumbled
- 1 x 400g tin chickpeas, drained (optional, for a bigger meal)
- Small handful fresh parsley and mint, chopped
- 5 tbsp extra-virgin olive oil
- Juice of 1½ lemons
- 1 tsp dried oregano
- 1 garlic clove, grated
- Sea salt and black pepper
Method
- 1.Rinse the quinoa well under cold water, then simmer it in the salted water or stock, covered, for 12-15 minutes until the little tails pop and the liquid is gone. Take it off the heat, fluff with a fork, and let it cool.
- 2.While the quinoa cools, dice the cucumber, halve the tomatoes, and chop the red onion and pepper. Tip them into a large bowl with the olives (and the chickpeas, if using).
- 3.Whisk the olive oil, lemon juice, oregano, grated garlic, and a good pinch of salt and pepper into a dressing.
- 4.Add the cooled quinoa to the vegetables, pour over the dressing, and toss well.
- 5.Fold in the feta and herbs, taste for salt and lemon, and serve — or chill for 30 minutes first to let it come together.
